Davis Roethler cleans windows for free at struggling Kansas City restaurants, but what he's really doing is washing away obscurity. Armed with recording glasses and 8,700 Instagram followers, the Window Wolf co-owner flips the food influencer script-instead of reviewing plates, he tells the stories of the people behind them, like pitmaster Gerald Dunn who also directs entertainment at the American Jazz Museum. "When you just look at the data, opening up a restaurant, from a business standpoint, it's a terrible idea," Roethler says, which is precisely why he keeps returning to film, to talk, to pull out the personal struggles and passions that turn these places into destinations with lines around the block. For Kolaches and Coffee, his attention may have saved the business entirely-proof that sometimes the most practical act of service is simply helping someone be seen.
